Now that summer is finally upon us, I’m super stoked for ALL of the healthy summer salads, delicious potlucks, and barbecues!
As the seasons change, so should the food on your plate! Eating seasonally provides you with more fresh and nutritious produce, promotes eating locally, saves you money, and supports variety in your diet!

In this post, I’ve rounded up 7 of the most delicious and healthy summer salads that your family and friends will absolutely love this season.
This has to be one of my favorite summer salads. Featuring: strawberries! You can make it your own by choosing the veggie ingredients you have on hand. But, do not (I repeat: DO NOT) miss out on this strawberry vinaigrette! It is UH-MAZING you guys. I’ve made it for multiple potlucks, and it’s always a huge hit.
This healthy summer salad combines arugula, Cara Cara oranges, almonds, quinoa, and dried prunes for a recipe that can be used as a plant-based meal all on its own! Dried prunes are the perfect way to add extra fiber and potassium to your meals, and you can easily find the dried variety next to the raisins or other dried fruit at the grocery store.
If you’re in a pinch to whip up a quick and healthy summer salad, then this peach avocado Caprese recipe is the one for you! It pulls in juicy summer peaches and combines them with avocados, tomatoes, and mozzarella pearls. Drizzle some basil, olive oil, and balsamic vinegar over the top and voila! You got yourself a colorful and delicious salad to bring to your next barbecue.
Is it even summertime if you don’t include a juicy watermelon salad?! Not only is this summer salad delicious, but it also includes plant-based protein, complex carbs, and healthy fats to keep you full and satisfied. Plus, the champagne dijon vinaigrette drizzled on top is the perfect combination of salty and sweet.
Three bean salads are perfect for summer potlucks because they are cheap to make, can feed a crowd, and use fresh summer veggies like cucumbers and bell peppers! We love garden fresh cucumbers and bell peppers from my in-law’s backyard. But, if those aren’t available, our local farmer’s market has great options too. This fresh, Mediterranean spin on a three bean salad is one of my favorite healthy summer salads to make.
What do you get when you combine nutrient-packed kale and antioxidant-rich blueberries? A deliciously healthy summer salad! This massaged kale blueberry salad also contains a whole grain called bulgur. When cooked, bulgur has a similar consistency to quinoa and is packed with fiber.
If you live in, or visit, Colorado you HAVE to try our Palisade peaches in the summer. I know I’m biased, but they are pretty dang juicy and delicious! This is another one of my favorite healthy summer salads. It features fresh peaches, avocado cubes, toasted almonds, and a simple homemade balsamic vinaigrette. These flavors also work perfectly with a roasted filet of salmon or grilled chicken breast on top!
