Finding healthy sheet pan dinners is a new obsession of mine. I mean come on. They use one pan (easy clean up). They are quick. And a lot of them are a great representation of the most important components of a meal: protein, fat, and fiber. What’s better than fajitas – especially when they take less than 30 minutes to make!? This is one of my favorite sheet pan recipes from Laughing Spatula. Plus, they include a homemade fajita seasoning recipe that is really easy, but doesn’t include all those additives and salt found in the seasoning packages! For a higher fat-lower carb option, add some sliced avocado, sour cream, and cheese to the mixture. Otherwise, enjoy with some rice, beans or tortillas!

The sauce is simple and made with REAL food ingredients (unlike a lot of the frozen Asian dishes out there).

I love the combination of the salty pumpkin seeds with the sweetness of the dried cranberries 😍. Plus, if you or your family members aren’t huge fans of tofu, you could easily replace it for chicken in this sheet pan dinner, too.
Confession time: I am terrible at cooking pork. Can anyone else relate?! I always overcook it, or end up finding a recipe that is way too complicated. Not today! This pork tenderloin recipe from Good Life Eats is one of the best sheet pan dinners using pork. You can really choose any combination of veggies to roast alongside the pork, too. Plus, this recipe can be done in just around 30 minutes! (Depending on which veggies you choose 😊).
I absolutely LOVE bruschetta appetizers. Plus, I love cheese. So this sheet pan recipe from Damn Delicious is my favy! Feel free to be extra generous with the extra virgin olive oil for a boost of healthy fats, too!
